Homemade Energy Bars


These easy no-bake homemade energy bars are made with oats, peanut butter, honey, dried fruit, and seeds. They make a great lunchbox snack, after-school treat, hiking snack, or healthy grab-and-go breakfast.

Ingredients

  • 1 1/2 cups oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup chopped dates or shredded coconut
  • 1/2 cup sunflower seeds or ground flaxseed
  • 1/2 cup dried cranberries, cherries, or raisins
  • 1 teaspoon vanilla extract

Directions

  1. Place all ingredients in a large mixing bowl.
  2. Stir until everything is evenly combined.

  3. Press the mixture firmly into a lightly greased 8-inch square pan.
  4. Refrigerate for at least 1 hour or until firm.
  5. Cut into bars and serve.

Kid Cooking Tip

Kids can help measure ingredients, stir the mixture, press it into the pan, and cut the bars with a plastic knife after chilling.


Variations

  • Replace the dried fruit with mini chocolate chips.
  • Use almond butter or sunflower seed butter instead of peanut butter.
  • Add 1/4 cup shredded coconut for extra texture.
  • Roll the mixture into snack balls instead of pressing into a pan.
  • Add cinnamon for additional flavor.

Storage

Store energy bars in an airtight container in the refrigerator for up to one week. They can also be frozen for longer storage.
