Ginger Carrot Soup - Vegan Recipe
This creamy vegan carrot soup combines sweet carrots, fresh ginger, garlic, and coconut milk into a warm and comforting meal. The fresh ginger adds a bright flavor while the coconut milk creates a silky smooth texture perfect for chilly days or healthy lunches.
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 small sweet onion, diced
- 3 to 4 cloves garlic, minced
- 1 1/2 pounds carrots, diced
- 1 medium red bell pepper, diced
- Sea salt and black pepper, to taste
- 3 cups vegetable broth
- 1 tablespoon fresh ginger, minced
- 2 teaspoons fresh thyme leaves
- 1/3 cup full-fat coconut milk
Directions
Heat olive oil in a large soup pot or deep skillet over medium heat. Add onion, garlic, carrots, and bell pepper. Season with salt and black pepper and cook, stirring frequently, until vegetables soften and become translucent, about 5 minutes. Add the vegetable broth, ginger, and thyme leaves and stir to combine. Cover and simmer until the carrots are fork tender, about 10 to 15 minutes, stirring once or twice while cooking. Remove from heat and puree the soup with an immersion blender until smooth. A regular blender or food processor may also be used. Taste and adjust seasonings if needed. Return the soup to medium heat and stir in the coconut milk. Heat for 1 to 2 minutes until warmed through. Serve immediately.
