Crazy Day Meatloaf Balls

Meatloaf Balls
These tender Meatloaf Balls are a fun twist on traditional meatloaf. Baking them first helps them hold their shape before they finish simmering in a simple tomato sauce. They're perfect served over mashed potatoes, pasta, or with warm Italian bread.
Prep Time: 20 minutes
Cook Time: 30 minutes
Serves: 4-6
Ingredients
- 1 pound ground beef
- 2 slices Italian bread, crusts removed
- 1/2 cup milk
- 1/3 cup rolled oats
- 1 medium onion, finely chopped
- 1 green bell pepper, finely diced
- 1 (8 oz.) can tomato sauce
- Salt and pepper, to taste
Directions
- Preheat oven to 350°F.
- Tear the soft center from the bread and soak it in the milk for 5 minutes.
- In a saucepan, combine the tomato sauce, half of the onion, and half of the bell pepper. Simmer over low heat while preparing the meat.
- In a large bowl, combine the ground beef, soaked bread, rolled oats, remaining onion, remaining bell pepper, salt, and pepper.
- Mix gently until just combined.
- Shape into golf ball-sized meatloaf balls and place on a lightly greased baking sheet.
- Bake for 12-15 minutes until lightly browned.
- Transfer the meatloaf balls to the simmering tomato sauce.
- Cover and cook another 10-15 minutes, or until the centers reach 160°F.
- Serve hot over mashed potatoes, rice, buttered noodles, or with crusty bread.

- Measure the oats and milk.
- Mix the meat mixture.
- Roll the meatloaf balls.
- Help spoon sauce over the finished meatloaf balls.
Variations
- Use ground turkey instead of beef.
- Add Italian seasoning or garlic powder.
- Top with shredded mozzarella during the last few minutes of cooking.
- Serve in hoagie rolls for meatloaf ball sandwiches.
