Layered Vegetable Bake
This easy layered vegetable bake is a flexible family recipe that works with whatever vegetables you have on hand. Thin slices of vegetables are layered together, seasoned, and baked until tender and flavorful. It's a great healthy side dish or light vegetarian dinner.
This is one of those recipes that really doesn't need exact measurements. Simply use your family's favorite vegetables and layer them together for an easy baked meal.
Ingredients
- Zucchini, sliced
- Potatoes, sliced thin
- Eggplant, sliced
- Tomatoes, sliced
- Salt and pepper, to taste
- Italian seasoning, parsley, or favorite herbs
- Parmesan cheese or other cheese, optional
Directions
Preheat oven to 350°F. Slice the vegetables into thin rounds. Layer the vegetables in a greased baking dish or pie plate. Sprinkle with salt, pepper, and Italian seasoning or herbs of choice. Cover the dish with foil and bake for 30 minutes. Remove the foil and sprinkle with Parmesan cheese if desired. Continue baking another 25 to 30 minutes, or until the potatoes are tender and the vegetables are lightly browned.
Yield: About 4 to 6 servings.
