Veggie Layered Dish


This is a recipe that you don't really need a recipe for, LOL!

Cut slices of zucchini, potatoes, eggplant and tomatoes. Whatever vegetables your family likes to eat.

Layer in a flat baking dish or pie plate.

Sprinkle with salt and pepper. Sprinkle with Italian seasoning or parsley or any other spices you prefer.

Bake for 30 minutes covered in foil at 350 degrees. Then take off foil and sprinkle with Parmesan cheese or other cheese you'd like. Or leave off if you'd like to keep it vegetarian.

Continue to bake another 25-30 minutes or until potatoes are tender.

It's that easy and delicious. I'm going to try this again using different vegetables such as carrots (as my kids like cooked carrots), yellow squash, or sweet potatoes.
