English Muffin Pizzas

The kids helped make a batch of English muffin pizzas for dinnertime and extra to pack in their lunches. I like to make my own English muffins and freeze them in ziploc bags, 10 per bag.

Making pizzas is probably one of the first things my kids ever helped me with in the kitchen and they still are anxious and happy to lend a hand with pizza making.

Another tip is I always add a little extra veggies
to the sauce, in this batch I added a roasted eggplant. To roast place eggplant on a cookie sheet and poke several places with a fork or knife. Bake at 450 degrees in the oven for 1 hour. Let it cool, peel it and puree it. Then stir it into the sauce.
