Chocolate Chip Cookie Cheesecake
These mini chocolate chip cookie cheesecakes combine creamy cheesecake filling with crunchy chocolate chip cookies and mini graham cracker crusts. They make fun individual desserts for parties, holidays, birthdays, and special family treats.
Ingredients
- 2 (8 ounce) packages cream cheese
- 3 eggs
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 2 packages mini graham cracker crusts
- 7 mini chocolate chip cookies, crushed
Directions
Preheat oven to 350°F. In a large mixing bowl, combine the cream cheese, eggs, and sugar until smooth. Add the vanilla and continue mixing with a hand mixer until creamy. Crush the mini chocolate chip cookies into small pieces and stir them into the cheesecake mixture. Spoon the cheesecake filling evenly into the mini graham cracker crusts. Bake for approximately 25 minutes or until the centers are mostly set. Allow cheesecakes to cool before serving. Refrigerate leftovers.
Yield: About 12 mini cheesecakes depending on crust package size.
