Barry's fortune cupcakes
These fun fortune cupcakes were invented by a creative 6-year-old and are filled with sweet surprises and silly fortunes. Kids can customize the hidden messages for birthdays, parties, holidays, classroom celebrations, or family dessert nights.

Ingredients

Cupcakes

  • 2 cups flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch chips

Frosting

  • 2 cups powdered sugar
  • 1 tablespoon lemon juice
  • 3 teaspoons lemon zest
  • 1/2 teaspoon cinnamon
  • 1 to 2 tablespoons milk, if needed

Directions

Preheat oven to 350°F. Line a muffin tin with cupcake liners.

In a large bowl, whisk together the eggs, sugar, vanilla extract, melted butter, and milk.

Stir in the flour, baking soda, cinnamon, and salt until just combined.

Fold in the chocolate chips and butterscotch chips.

Fill cupcake liners about 2/3 full with batter.

Bake for 15 to 18 minutes or until a toothpick inserted into the center comes out clean.

Allow cupcakes to cool completely before frosting.

To prepare the frosting, stir together the powdered sugar, lemon juice, lemon zest, and cinnamon until smooth. Add a small amount of milk if needed for spreading consistency.

Frost the cooled cupcakes.

Write fortunes, jokes, or encouraging notes on small strips of paper. Roll each one up and lightly tape if needed. Place each fortune onto a toothpick and stick into the top of each cupcake before serving.
Yield: About 12 cupcakes.
