This Minestrone Soup recipe can be prepared and cooked in the crock
pot, made in a large batch and frozen or a quick serve meal.
We've included two recipes the first one is different in that
it has zucchini, beans and noodles. As well as uses chicken
broth. Although we like them both the second one is our
favorite. Try both and see what you like.

Minestrone Soup Recipe
Ingredients:
Sausage or ground hamburger
1 Cup carrot, diced
1 small zucchini, diced
1 onion, diced
1/2 Cup chopped celery
1/2 Cup chopped cabbage
2-15 oz. cans chicken broth
16 oz can kidney beans
1 can garbanzo beans
28 oz. diced tomatoes
1 1/2 Cups water
2 Tablespoons basil
2 Tablespoons oregano
spaghetti noodles broken into 1/2-1 inch pieces
Parmesan cheese, topping
Cook sausage and chopped onion together in large saucepan. Add in
saucepan, chopped vegetables including carrot, celery, cabbage, and
tomatoes. Don't add zucchini yet though.
Stir in chicken broth, kidney beans, garbanzo beans, water and
spices. Simmer until carrots and celery is tender. Add in zucchini
and broken spaghetti noodles. Cook until noodles are
tender. Serve with Parmesan cheese. If
preparing
ahead of time, using in the crock pot or planning on freezing leave
out noodles and zucchini until dinner time. If using crock pot add
30 minutes-1 hour before serving. Test noodles before serving.
To freeze, allow to cool and store in freezer containers.
Minestrone Soup Recipe
Ingredients:
1 lb. hamburger
1 onion, grated or chopped
3 cloves garlic, minced
2 stalks celery, chopped
2 carrots, diced
small bag frozen corn
small bag frozen green beans
28 oz. can chopped tomatoes
1 can tomato paste
3-4 potatoes, peeled and diced
1/2 head cabbage, chopped
1 teaspoon basil
1/2 teaspoon pepper
2 teaspoons salt
1/2 teaspoon oregano
2 bay leaves
4 cups beef broth or equivalent water and beef bouillon
8 cups water
In stockpan, sauté hamburger, onion and garlic. Drain grease and add
back to pan. Add remaining ingredients. Stir together and simmer for
30 minutes.
